Bulldozier

(Florida Lobster)

Does not have claws like the Maine variety. Has a coarse texture, white meat with sweet distinct flavor & is low in fat.


Crab Cakes

Crab cakes are made of blue crab meat patties with stuffing ingredients, red & green pepper, onion, & seasonings.


Crab Meat

(From local Blue Crabs)

Lump meat-is the largest pieces of white meat from the body, which is delicately flavored.
Claw meat-darker meat from the claws with a stronger nutty flavor and has a natural brownish tint (mostly used for crab cakes).
Cocktail Claws (fingers or claw fingers)-for cocktails or appetizers with part of the pincher still attached (mostly breaded & deep fried).


Crabs, Live Blue

Live blue crabs are found along the Gulf. They have a delicate texture, a rich, sweet, succulent and buttery flavored meat & is low in fat.


Fish Dip, Smoked

Smoked fresh Mahi-Mahi Dolphin fish, mayonnaise, Ranch dressing mix, Cajun seasoning, season salt, & lemon pepper seasoning. This is an excellent dip served with saltines, buttery round crackers, or on a salad.


Flounder

Flounder is a fine textured and delicate fish. Has firm & flaky white meat that is mild flavored and very lean.


Grouper

Is a white-fleshed, lean, and fairly bland tasting fish. It is a light meat with a very light delicate flavor which is low in fat. We carry the black & red grouper filets. The black grouper are found in deeper water and tend to be bigger than the red grouper, which are bottom dwellers.


Snow Crab Legs

These crabs are known to be the best tasting crabs in the world. They have a mild taste of succulent sweet meat and these legs come about 21 to 24 legs per 10 pounds.


Mullet

Whole or Smoked
This is also a delicacy in Florida because of its firm texture and light meat with moderate flavor. Mullet is also a lean fish.


Oysters

(Only Apalachicola Bay oysters)
Oysters are a meaty, high quality source of protein. Has tender to firm texture and the flavor varies from salty to bland. Oysters are extra lean.
We sell oysters in the shell or freshly shucked. Oysters in the shell are sold by the bag, half-bag, party box, and by the dozen. The shucked oysters are sold by the pint or in 4 to 8 pound gallons.


Scallops

(Bay or Calico & Sea Scallops)
Scallops are sweet, succulent meat with a delicate flavor that is extra lean. The Bay scallops are smaller in size about a half inch in diameter and are sweeter than the Sea scallops which are one & a half inch in diameter.


Shrimp

Shrimp are crisp textured with sweet, distinct flavor and is low in fat.
We sell 3 sizes of shrimp. The smallest sizes we have contain 36 to 40 shrimp to a pound. The medium shrimp has about 26 to 30 shrimp per pound and the large shrimp have 16 to 20 to a pound. The shrimp we carry will vary to what is available. We do normally carry pink, white, & brown shrimp.


Snapper, Red

Red snapper has a firm texture with white to pinkish meat with a mild flavor. It is very lean fish. We sell them filet by the pound.


Soft-shell Crab

These crabs are the native blue crabs but in their molten state. These crab's shell becomes soft and the whole crustacean is edible. They are just as sweet as the hard shell blue crabs. We sell the jumbo and whale sized soft-shells.


Stone Crab Claws

Stone crab claws are a seasonal delicacy that is a firm textured sweet buttery meat that is low in fat and is extra lean. They can be consumed hot or cold.


Tuna Loins

(Yellowfin Tuna Loins or Steaks)
This firm meat is extra flavorful because of its semi-dark meat.
